Amtrak Enhances Dining Experience
 Amtrak’s
Cascades train, which travels along the Pacific Northwest corridor between
Eugene, OR, and Vancouver now boasts another attraction other than the
rugged scenery. Passengers can dine on a selection of entrees prepared
by acclaimed Washington state chef Kathy Casey. The wide variety of selections
includes such offerings as Pacific Rim Sake Teriyaki Salmon with Ginger
Shitake Rice and Sugar Snap Peas, and Chicken Breast with Sour Cherry
Chutney and Citrus Couscous.
